FOR the first time in history, two restaurants in Singapore have been awarded three Michelin stars each, the highest award from the prestigious food guide.
They are Odette at the National Gallery and Les Amis on Scotts Road. Both are French restaurants which received two stars in the previous year.
The prestigious annual guidebook sets a standard of excellence with its star rankings and Bib Gourmand selections.
It takes into consideration elements such as product quality, preparation and flavors, the chef’s personality as revealed through his or her cuisine, value for money, and consistency over time across the entire menu.
The criteria for the star rankings, which was established in 1936, are as follows:
*: “Une très bonne table dans sa catégorie” (A very good restaurant in its category)
**: “Table excellente, mérite un détour” (Excellent cooking, worth a detour)
***: “Une des meilleures tables, vaut le voyage” (Exceptional cuisine, worth a special journey)
The top three-star award is given only to establishments with “exceptional cuisine” that is worth a special journey to eat at. “Our highest award is given for the superlative cooking of chefs at the peak of their profession. The ingredients are exemplary, the cooking is elevated to an art form and their dishes are often destined to become classics,” Michelin was quoted as saying.
Two stars meant that the eatery was worth a detour.
In 2018, the Michelin Guide Singapore 2018 awarded a total of 39 restaurants on the island-city state with Michelin stars. This year, aside from Odette and Les Amis, five restaurants were honored with two stars while another 37 establishments received one star each.
In speaking about Odette, helmed by chef Julien Royer, Michelin said the restaurant emphasizes a comprehensive experience in a discreet and intimate setting as elegant as the setting of the plates. International flavors and subtle Asian touches perfectly match with highly mastered French technique here”.
And of Les Amis, Michelin said, “Chef Sébastien Lepinoy, guided by impressive attention to the smallest detail, offers a contemporary cuisine of French inspiration that sublimates high-quality products. The wine list, with more than 3,000 references, is rightly considered one of the most dazzling in the Asian continent.”
